Virginia Bechtold, supervisor of nutrition services for the Council Bluffs Community School District, said the district has decided to take the HealthierUS School Challenge. Bechtold said Council Bluffs schools already made changes to the school menu to improve nutrition and quality “but the challenge is more specific. Bechtold said the district has been working with nutrition issues “for years” and has found ways to cut calories, include fiber, add vitamins and minerals and serve the proper portion sizes in ways that appeal to students. For example, a study published in the Journal of School Health showed that students with an increased fruit and vegetable intake and lower fat intake were significantly less likely to fail a standardized literacy assessment than children with poor diets.
